I originally believed that the were solely a religion, but I was shown that the term can be used to describe heritage or religion.

I find your response very interesting, I believe the term used now is ethno-religious, my next question may be difficult to answer.

In the Holy Bible, it states that the Jewish peoples are Gods chosen people and they are to be treated as such, would this be considered a biased or racist statement?

If there is a God I very much doubt that its thoughts are dictated in the Bible. Of course such sentiment would be racist, it pretty much fits the textbook definition. I do not think such is a very uncommon thing for the bible, prejudices.

I believe it is every persons obligation to oppose racism, bigotry and bias, identifying the same would seem to be the logical first step in upholding that obligation.

I see. In my opinion, it is wrong to discriminate based on any difference, so to me it wouldn't matter what you would call the Jews, but I can definitely see where you're coming from.

For the Jews that are descended from Abraham, Isaac and Jacob (or, if you prefer, from certain unnamed individuals who came from what is now northern Iraq), they're an ethnic group - just like the Arabs that claim descent from Abraham through Ishmael.
